For the first time only… make a ball of dough with about 3 cups of regular flour and some water. It is not necessary to use semolina, eggs and oil because you will be throwing it out afterwards.
Cut your ball of dough into 4 equal pieces. Pass each piece in all the rollers of the machine making sure you pass it through each thickness setting on the main roller and both cutters (fettucine and spaghetti). You may or may not see some grease on you dough, which is normal and put there to maintain your machine in its box.
Once all the pieces have been passed and there is no grease left, you are ready to start making your own delicious homemade pasta!
To clean your machine afterwards is simple – NEVER PUT YOUR MACHINE IN WATER – all you need is a pastry brush to brush off the flour after usage. Have fun!
