INGREDIENTS:

  • 500g of small green lentil’s
  • 100g of pancetta, diced
  • 1 small onion, chopped
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 1 jar of marinara sauce from Stefano
  • 3 bay leaves
  • 1 hot pepper
  • 2 tbsp olive oil

PREPARATION:

  1. In a pot, sauté the vegetables and the hot pepper in oil.
  2. Add the pancetta and sausage meat, and brown well. Then, add the tomato sauce and bay leaves.
  3. Let simmer for a few minutes.
  4. Add the lentils and cover with 4 liters of water.
  5. Let simmer for 30 to 40 minutes until the liquid has evaporated.
  6. Drizzle a little olive oil over the mixture at the very end.
  7. Delicious when served with toasted croutons!
