800g chicken breast (cut in small cubes)
3 tablespoon olive oil
1 lemon (juice only)
11/2 tbsp Dijon mustard
3 tbsp fresh basil (finely chopped with mezzaluna)
3 tbsp fresh thyme (finely chopped with mezzaluna)
1 tbsp dried oregano
1 clove of garlic (finely chopped)
Salt and pepper
12 Skewers (20cm)
In a bowl, mix together the olive oil, lemon juice, mustard, basil, thyme, oregano, garlic and season with salt and pepper.
Add chicken and toss to coat. Cover and refrigerate for 1 hour.
Preheat BBQ grill to high heat.Remove chicken from marinade and thread onto skewers.
Lightly oil grill and cook for 10 minutes, turning on all sides.
