Four cheese ravioli

Ingredients

Stuffing:

140 gr toma cheese

140 gr ricotta cheese

140 gr gorgonzola

40 gr parmesan

2 egg yolks

2 tbsp parsley (minced)

Nutmeg

Salt and pepper

 

Sauce:

 

100 gr butter

1 cup of fresh herbs (parsley, basil, green onions, thyme, etc)

Parmesan cheese


Preparation

Place all of the stuffing ingredients in a food processor and blend until texture is smooth.

Place one pasta sheet over the ravioli form.

Fill each slot with a spoon of stuffing.

Place another sheet of dough over the stuffing.

Roll and press with a rolling pin to cut the ravioli.

Place the ravioli in boiling water for approx. 2 minutes.

Place cooked pasta in a warm oven dish and add sauce mixture.

Mix well adding a little olive oil and serve.
