Anna's lemon biscuits

5 egg yolks (large)

5oz. sugar

5oz. vegetable oil

5oz. of milk

2 teaspoons lemon juice

2 tablespoons baking powder (Magic Baking Powder)

3 cups of flour

Zest of two lemons


Mix flour, baking powder and lemon zest.

In a separate bowl, combine eggs, sugar, milk, oil and lemon juice.

Add the flour mixture and stir.

Flour a work area and pour the mixture over it.

Knead and add a little flour until the consistency is smooth.

With oiled hands, cut the pieces all the way like little finger (approx 3.5 inches long)

Shape each piece as a coiled snake.

Bake at 350°F for 10 minutes.

Remove from oven and let cool completely on a cookie rack.



400 g icing sugar

Juice of 1 ½ lemon (approx 3 tablespoons) 

Mix to the desired consistency.

Dip the top of each cookie in the frosting and put on the rack.
