Cavatelli

Ingredients
350g of semolina
3/4 cup of water
Preparation
On your work surface, form a well with the durum wheat semolina. Add the water a little at a time and mix until you obtain a homogeneous, medium-firm ball of dough, adding more water if necessary.
On a lightly floured surface, knead a few times. Cover with plastic wrap and let rest for 30 minutes.
Roll into a 1 cm diameter ball and pass through the cavatelli machine.
Excellent with Roasted garlic and dried tomato pesto
And with Fagiolini in padella con pomodori
