Liver sausage tomato sauce

6 pork liver sausages (cut in 3 pieces) *

2 large white onions (cut in slices) 

1/2 bulb of large fennel or whole small fennel (cut in slice) 

8oz of red wine 

1 liter of tomato sauce (Stefano arrabbiata sauce or basil sauce)

1 or 2 little peperoncini (according to our own taste)

4 tbs of olive oil 


In a 24 cm saucepan, heat the olive oil on medium.

Add the onions and peperoncini and increase the temperature.

Once the onions are golden, add the sausages and cook until golden brown.

Add the wine. Once the wine has evaporated, add the fennel and cook at high temperature for 3 minutes. Mix well

Add the sauce and reduce the temperature to medium and continue cooking uncovered for 20 minutes.

This sauce is very good for people who love liver.

Excellent with pasta or on a delicious polenta.
