When you buy one of these wonderful pieces, make sure you soak it in water for at least 12 hours before usage.
Dry well and pass a clove of garlic all around the interior.
Wash with soapy warm water, dry well again and it is ready to be used. If this process is not done, you risk the pot's pores to absorb the odor of the first thing you cook in it and will not be able to get rid of it later!
When storing, keep cover off.
