Rustic italian apple cake

Ingredients

700 g Honey Crisp apples (peeled, cored with Cuisipro apple corer and sliced ¼” thick

Zest and juice of 1 lemon

100 g butter at room temperature

2 eggs

1 tsp. cinnamon

200 g sugar

200 ml milk

200 g flour

1 pinch salt

1 envelope of chemical yeast Cucina della nonna or 1 tablespoon baking powder and 1 tablespoon of vanilla extract

Powdered sugar


Preparation

In a bowl, add apples to zest and lemon juice (to stop apples from browning), cover and put in fridge for 4 hours.

Preheat oven at 350°F

With the help of a hand blender, mix butter, eggs, sugar, cinnamon and milk. The mixture will be very liquid.

In another bowl, mix dry ingredients together (flour, yeast and salt).

Add mixture of dry ingredients to the liquid mixture and mix well.

Add apples and mix well again.

Grease and flour a 24cm (9’’) OXO cake mold then pour in cake batter and let bake for 1 hour. Once the cake has cooled, sprinkle powdered sugar on top.

Delicious for breakfast, in the lunch box for big and small and makes a succulent dessert!
