Red pepper and almond pesto

Ingredients

400g penne

2 red peppers (drained and coarsely chopped)

3 green onions (sliced)

¼ cup almonds (roasted)

2 garlic cloves (whole)

¼ cup Stefano's extra virgin olive oil

2 tbsp Parmesan

4 tbsp goat cheese


Preparation

Begin a large pot with salted water to a boil. Add the pasta

Meanwhile, place the rest of the ingredients in a food processor and mix until you obtain a creamy texture. Add a little pasta water if necessary.

Put the pesto in a large serving bowl and add the cooked pasta. Mix well and finish if some freshly grated parmesan if needed.
