Sweet Onion and apple Grilled Cheese

1 Vidalia onion, cut into thin strips
4 slices of whole grain bread
4 slices of Swiss cheese
1 apple, cut into thin strips
1/3 cup of walnuts
Olive oil for cooking
In a large heavy-bottomed pan heat a drizzle of olive oil, and then sauté the onions over medium-low heat for about 45 minutes, stirring regularly. Set aside.
Brush olive oil on each side of the bread slices.
For each grilled cheese, place 1 slice of cheese, and then add 2-3 tablespoons of caramelized onions.
Next, add the walnuts, apple slices and remaining cheese.
Top with second slice of bread and then press the sandwich.
Cook in a cast iron skillet, preferably serrated, for about 4 minutes on each side. Serve immediately.
