Quick Ragu alla bolognese

Ingredients
40g butter (1 ½ oz)
2 tbsp. olive oil
1 onion, diced
1 carrot, diced
¼ cup celery, diced
250 g lean ground veal
1 cup homemade tomato coulis or Stefano's tomato basil sauce
Salt and pepper
Preparation
Dice the onion, celery and carrot
Heat butter and oil in a frying pan.
Add vegetables and ground veal.
Fry until meat is coloured and vegetables are soft
Season to taste
Add a drop of water and the tomato coulis
Simmer for 1 hour on low heat
Mushrooms can be added to the mixture
To sweeten the taste, add a drop of cream at the end
