String beans and potato salad

Ingredients

6 medium potatoes Yukon gold (cooked with the skin, then remove the skin and cut into slices)

350 gr of long beans (bleached, cooled in water and cut in half)

1 clove of finely chopped garlic

½ cup chopped Italian parsley

1 tablespoon of oregano

Salt

3-4 tablespoons Stefano's olive oil


Preparation

Mix all the ingredients in a bowl

Salt and add a lot of oilve oil

Mix well and serve


Yield

6 servings.
