300gr of 00 flour or Manito flour
16gr dry cake yeast Lievito or 1 tablespoon of baking powder and 1 tablespoon of vanilla extract
150gr of sugar
100gr of soft butter
100ml of milk
4 diced Cortland or Crispy apples* ( you could do this recipe with 5 pears)
Zest of 1 1/2 lemon
Pinch of salt
Preheat the oven at 350°F
In a bowl , beat the butter with the sugar.
Add eggs one at a time and mix well.
Add the milk and mix well.
Stir in the flour, yeast and salt.
Add the apples and lemon zest and mix well.
Put the cake mixture in a 24cm pan Emile Henry which has been previously buttered and floured.
Bake 35-40 minutes. Check with the pastry thermometer
Remove from the ovenand let cool.
Serve with icing sugar, whipped cream, ice cream or cinnamon sugar.
* Dice with the vegetable and fruit chopper
